  • Pour oil in a saucepan or in a pressure cooker and saute the onion, the carrot and the squids.
  • Add the garlic, the celery stalk, the wine and the tomatoes and  simmer until squids are tender. In the pressure cooker they need only 20 minutes.
  • When squids are ready then add the orzo, add one cup of water  and simmer until orzo is cooked. Add salt and pepper for taste.
  • In the end there should only little juice in the saucepan. If orzo absorbs all the water you need to add more.
  • Remove from heat, remove celery stalk and serve squid pieces with orzo on the side.
