  • In a blender beat the egg yolks, the mustard and the sugar. Add gradually and very slowly oil and continue mixing in medium speed (4 from 1- 10).
  • When the mayonnaise thickens, add pepper and salt.
  • Finally pour lemon and vinegar and mix again for a while.
  • Stop the blender, empty the mixture in a bowl and preserve in the fridge for 2-3 hours before you serve it.
  • It is preserved in the fridge for 3-4 days
