  • Wash the meat pieces and bring them to boil. Remove froth and wash them again.
  • Heat olive oil and saute onion and garlic until golden. Then add meat pieces and brown on all sides.
  • Finish browning with wine.
  • Add tomato paste, salt, pepper, vinegar and simmer for 2 hours until meat is tender.
  • In the meantime soak 1/2 cup of rice in water.
  • When meat is tender add rice and simmer to absorb the most of the remaining meat juice.
  • Remove from heat and let the meat cool. Add thyme and parsley and mix.
  • Baste a medium baking pan with oil and spread the bottom filo sheet.
  • Spread the meat pieces evenly.
  • Spread grated cheese on top.
  • Cover with the top filo sheet. Baste it with oil.
  • Bake in preheated oven in 180 C for 45 - 60 minutes, depending on the oven and until the filo is baked.
  • Remove from oven and serve.
