Trahana soup

- Peel and mash the fresh tomatoes.
- In a saucepan, combine the mashed tomatoes, trahana, olive oil, salt, and pepper. Stir in 4 cups of water. Bring the mixture to a boil, then reduce the heat and simmer gently for 15 minutes, stirring occasionally to prevent sticking.
- Remove from heat and serve immediately.
- For a delicious addition, crumble and melt feta cheese directly into the hot soup just before serving.
