- Wash and clean the strawberries by removing the stalks. If they are small leave them as a whole, otherwise cut them in the middle.
- Put them on a large and deep saucepan and sprinkle with lemon. Cover them with sugar and let them stand all night.
- Pour two cups of water and boil the strawberries a little until they foam and you skim them.
- Allow to stand for 12 hours.
- Drain the syrup from the strawberries and make it thick by boiling it over high heat. If necessary, skim.
- When it starts to thicken put back the strawberries and simmer for 5 more minutes.
- Remove from heat and let the sweet cool. Shake the saucepan so that the syrup is evenly distributed.
- Once cool preserve in sterilized jars in the fridge.
