  • Wash the chicken, remove giblets and cut in 6 pieces.
  • Melt butter in a large saucepan and sauté all the chicken pieces.
  • Add the olive oil and the tomato mash and stir.
  • Finally add the cinnamon stick, the cloves, a glass of water, season with salt and pepper and let the chicken cook in low heat for at least an hour.
  • Check at regular intervals and add water if more is required.
  • When chicken is cooked and the tomato sauce has thickened (water should be absorbed and only the oil should remain) remove from heat.
  • Serve with fried potatoes, rice or mashed potatoes.
