Pasta with tomato carrot salad and greek yogurt

Whole wheat penne with tomato carrot sauce and greek yogurt

For the sauce

Directions

  1. Mash the tomatoes.
  2. Grate the carrots.
  3. Chop the onion finely.
  4. Heat olive oil in a sauce pan and brown the onion.
  5. Add the tomato mash, stir and simmer for 5 minutes.
  6. Add the grated carrots, season with salt, pepper and simmer until sauce thickens and carrots are tender.

For the pasta

Directions

  1. Follow the boiling directions of the package.

To assemble

Directions

  1. Serve pasta and sauce warm. Pour sauce on top of pasta.
  2. Serve one spoon of strained yogurt on the side.

  • 500 grams whole wheat penne
  • 4 – 6 fresh tomatoes
  • 3 carrots
  • 1 large onion
  • 3 spoons olive oil
  • Strained greek yogurt
  • Salt
  • Pepper
