Trahana soup from Agra Lesbos

Directions

  1. Boil water on a saucepan and dissolve the tomato paste in it.
  2. Grate the fresh tomato and pour it into the saucepan. Stir
  3. Empty the trahana cup in the saucepan.
  4. Add olive oil, sugar, salt and pepper and taste. Fix taste if necessary
  5. Simmer for 20 minutes
  6. Serve warm

Trahana Packet

  • Optionally you can melt feta cheese and mix with the soup.
  • This is our favorite trahana. It is only sold in Lesvos and cannot be found in big food stores. It is sour in taste and has a strong smell.

  • 1 cup trahana (tiny sour dough balls)
  • 4 cups water
  • 3 spoons concentrated tomato paste
  • 1 fresh tomato
  • Salt
  • Pepper
  • 1 spoon sugar
  • 3 spoons olive oil
