The meals that we cooked and demonstrate in our pages have not been cooked by following the exact portions of ingredients that the recipes describe.
In some demonstrations we did not use some of the ingredients that the relative recipe describes, like herbs and seasonings. These changes do not affect the general idea of the recipe and slightly change its taste. Some recipes have many variations from region to region and it is quite common to find them in different places with slightly different ingredients.
The demonstration should be used, wherever possible, as a supplementary tool for understanding the recipe.
In some cases the steps described in the recipe are different from the steps showed in the demonstration. This change of the rank does not affect the final cooking result.
We believe that the pictures included in the demonstrations are very helpful and descriptive.
In most recipes we omit to give exact portions of some ingredients, like oil, salt, pepper, seasonings and herbs. In these cases it is a matter of personal taste and one should add as much of each ingredient as he likes. Especially when it comes to pour olive oil over salads or to use it in cooking we rarely count the exact portion to be added and we add approximately depending on our personal taste. Some people might say that since we do not address only to professional cooks we should give the exact portions of each ingredient. We do not share this opinion. Cooking requires a lot of epxerimentation.
Our intention is to add more demonstrations in the future and especially of the most "favourite" Greek recipes.
