Remove central bone and open widely the fish fillets. Place them in a plate or any suitable utensil. In other salting process the central bone is removed together with the head after the burning of the fish in salt for a whole day. In this recipe we remove it in the beginning and the removal is more difficult because the fish fillets are still raw. Next step... |
