Hints & Tips:
When purchasing spinach select ones with small, crispy, green coloured leaves. Avoid spinach with yellow spotted leaves. Fresh spinach should smell sweet, never sour or musty.
Fresh spinach will keep for three to four days in the fridge when it is well closed in a plastic bag.
Spinach requires VERY careful washing. Fresh spinach has soil and sand in the leaves and requires careful washing. You can fill a large bowl with lukewarm water, drop the leaves into it and agitate them with your hands in order to get rid of the soil. Repeat the process until all leaves are washed.
Greeks rarely consume spinach raw. They usually add it in pies or cook it with rice.
  Spinach is very rich in beta-carotene and lutein, and also has antioxidant properties. Rich in vitamins and minerals. Contains magnesium, folic acid, vitamin K and manganese. It also contains more protein than most vegetables.
