Hints & Tips:
Its use in Greek Cuisine is very common. Parsley is added raw in salads. It is bought in bunches .You should clean parsley thoroughly first because it holds soil. Only the leaves are used in salads, which should be cut finely. Parsley can be also found in dried form preserved in a jar. The jar should be well closed because the scent of parsley evaporates quickly. Dried parsley is usually added in sauces or in soups. It is always better to use fresh parsley than dried one and avoid using dried one in salads.
  High in iron, calcium and rich in vitamin C. Contains twice the portion of vitamin C of an orange. Cooking parsley destroys all of the nutritious value. Therefore it should be added 2 - 4 minutes before the end of cooking.
