Hints & Tips:
Soups may be the most popular use of leeks in most European cuisines. Greeks cook them with tomato and carrot in oil. They can be found in the market all year-round. When cleaning them wash them with plenty of water because they have too much soil. You might even have to cut them in the middle and separate some of the outer layers in order to remove all the soil. Waste both ends of each leek and cut it in three or more pieces, depending on the recipe. When boiled they become sweet in taste.
  The leek is a member of the onion family. Its flavour is more refined and sweet than the onion.
