| Hints & Tips: Fennel looks like dill. Its scent and taste though is much different and stronger. In Europe the root of the fennel, called finokio, is commonly used in soups, gratin and with pureed vegetables. It is also used in salads and sauces. Fennel can be added in vegetable pies and in stuffed vegetables, like in a version of stuffed tomatoes. Fennel seeds are also used for flavoring the famous Greek drink ouzo. Greeks do not use fennel so often and only in small portions, because its taste is strong.
