Squid with orzo

Directions

  1. Pour oil in a saucepan or in a pressure cooker and saute the onion, the carrot and the squids.
  2. Add the garlic, the celery stalk, the wine and the tomatoes and  simmer until squids are tender. In the pressure cooker they need only 20 minutes.
  3. When squids are ready then add the orzo, add one cup of water  and simmer until orzo is cooked. Add salt and pepper for taste.
  4. In the end there should only little juice in the saucepan. If orzo absorbs all the water you need to add more.
  5. Remove from heat, remove celery stalk and serve squid pieces with orzo on the side.

Ingredients

  • 1 kg small squids
  • 250 grams orzo
  • 1 onion, finely cut
  • 1 carrot, cut in small pieces
  • 1 parsley stalk
  • 1 garlic clove, crushed
  • 1/2 wine glass white wine
  • 1 tin preserved tomatoes or 3 fresh tomatoes, mashed and 2 spoons tomato paste
  • Salt
  • Pepper
  • 4 spoons olive oil
