Octopus with elbow macaroni

Directions

  1. Clean and wash the octopus. Cut in large pieces. Place it in a saucepan and boil it.
  2. Keep a cup of octopus stock and cut the octopus in small pieces.
  3. Mash the tomatoes.
  4. Empty the saucepan, saute the onions in the olive oil and add the tomatoes. Let the tomato sauce boil and add the octopus and the stock you have kept.
  5. Let the octopus boil and add the elbow macaroni. Add salt and pepper, 3 cups of water and stir regularly to avoid the macaroni sticking in the saucepan’s surface.
  6. Simmer for at least 30 minutes and until all the water evaporates..
You have to check the food regularly and add any water if more is required. Do not forget to stir regularly!

  • 6 fresh tomatoes
  • 250 gr elbow macaroni
  • 75 gr (1/4 teacup olive oil)
  • 1 chopped onion
  • salt
