Octopus Pilaf - (Htapodi pilafi)

INGREDIENTS

  • 1,5 kg octopus
  • 1,5 cup olive oil
  • 1 cup rice
  • 1 medium onion, finely sliced
  • 3 fresh tomatoes, mashed
  • Salt
  • Pepper

METHOD

Clean and wash the octopus. Cut in large pieces. Place it in a saucepan and boil it until tender. Keep two cups of octopus stock and cut the octopus in small pieces. Grate the tomatoes. Empty the saucepan, saute the onion in the olive oil and add the tomatoes. Let the tomato sauce boil and add the octopus and the stock you have kept. Let the octopus boil for 5 minutes. Wash rice in plenty of water and add it in the saucepan. Pour salt and pepper for taste and simmer until rice is ready. Add more water if most of it evaporates before the rice is cooked. Remove from heat and empty in a plate. Serve warm.
