Traditional omelette from Andros island - (Fourtalia apo tin Andro)
Traditional omelette from Andros island
NOTES The original "Fourtalia" from Andros is made with local sausages and "louza", which is smoked pork's meat. Also the pork's fat, which is used instead of oil and butter is called "glina" and is used in Andros for cooking and for preserving the country style sausages in it. Therefore, in order to cook the original fourtalia you need original ingredients. Apart from "Fourtalia" in Andros they also make "koukofourtalia", which is the same idea with the only difference that instead of potatoes they add broad beans "koukia".
