Pasta with tomato, garlic and garden rocket - (Makaronia me tomata, roka kai skordo)

NOTES

A quick and easy way to cook spaghetti. Serves 2 persons!


Greek : Μακαρόνια με ντομάτα, ρόκα και σκόρδο

INGREDIENTS

  • Spaghetti for two persons
  • Garden rocket
  • 2 garlic cloves
  • olive oil
  • Salt, for boiling the spaghetti
  • Parmezan cheese
  • 3 - 4 small round tomatoes

METHOD

Use a frying pan and heat the oil. Add the garlic, sliced in small pieces and the small tomatoes, cut each one in two pieces. Sauce for a while and then add half of the garden rocket. Mix well. In the meantime boil the spaghetti but not for much time (until they are 'al dente'). Then add them in the frying pan and mix them with the rest of the ingredients. Let them cook for a while, until they are soft, as much as desired. Then remove from heat, add some fresh garden rocket, pieces of parmezan cheese and mix well.
