2 spoon grated mitzithra cheese, or any other cheese with equal taste
Oil for frying
Salt to taste

METHOD
Beat the eggs in the mixer with some water.
Add the aromatics (onions, dill, parsley), the cheese and the flour. Mix well. Heat oil in a frying pan (30 cm diameter prefered) and pour the mixture. Let it cook in low temperature. When the bottom is cooked, cover the pan and let the top of the omelette be cooked.
