Orange cake - (Keik portokali)

INGREDIENTS

  • 500 gr self - raising flour
  • 1 1/2 cup sugar
  • 1 tea cup butter (or 1 tea cup olive oil)
  • 1 tea cup orange juice
  • 3 eggs
  • 3 tspns orange rind
  • Icing sugar

METHOD

Beat all ingredients (except of the icing sugar) with a mixer for 5 minutes. Pour the batter into a buttered cake tin and bake in 200 C for about an hour. Remove from oven, turn out on a platter and sprinkle with icing sugar.
Note: This version of the recipe is light, especially if using olive oil. You can use butter, add 1/2 cup sugar and two more eggs if you want the cake to be more calorific and to have stronger taste.

It works with a 9" x 9" pan. it only takes 35 minutes at 400 f (200 c). a tea cup of juice or oil is 3/4 cup or 6.5 oz. it is a nice tasting, fine textured cake, but could benefit from a sauce, ice cream, whipped cream, etc.

Started off with the oven at 200 c, quickly turned it down to 150 c for the remaining 50 mins. yummy cake, but does need cream to go with it!
