Rice from Sfakia - Crete - (Rizi apo ta Sfakia)

NOTES
The scent of this rice is unique! The broth and the butter give to the rice a perfect scent and taste. Keeping the broth of a cooked meat is useful. The broth, wherever it is used, can add extra taste to meals.

INGREDIENTS

  • 1 kg of meat (combine chicken and lamb) only used for taking the broth. If you already have it you do not need the meat.
  • 1 kg rice
  • 1 cup fresh goat’s butter
  • 1 glass lemon juice
  • Salt

METHOD

Cook the meat and keep its broth (measure 3 cups of stock for each cup of rice). Cook the rice in the broth. When it is half cooked add the lemon juice. Remove from fire, melt the butter and pour it over the rice.
