Cuttlefish in ink with mashed potatoes

Directions

  1. Cut the cuttlefish in stripes.
  2. Cut the spring onions thinly.
  3. Saute spring onions and cuttlefish in olive oil.
  4. Finish with red wine.
  5. Add the ink of two cuttlefish, dissolved in two cups of water.
  6. Simmer until cuttlefish softens and sauce thickens.
  7. Add pepper.
  8. Serve with mashed potatoes.

Ingredients

  • 2 cuttlefish, cleaned (bone removed, head and skin removed, ink preserved)
  • Ink of two cuttlefish
  • 2 spring onions
  • 1/2 glass of red wine
  • Olive oil
  • Pepper
